Easy pumpkin crisp
Easy pumpkin crisp is a dessert with a creamy pumpkin pie filling and a crunchy streusel topping. Serve it with whipped cream or over ice cream!
- 15 oz pumpkin puree canned
- 1 cup granulated sugar
- 3 large eggs
- 1½ teaspoon pumpkin pie spice
- 2 teaspoon vanilla extract
- ½ cup heavy cream
- 2 cups all-purpose flour
- 1½ cups granulated sugar
- 2 teaspoon ground cinnamon
- 1 teaspoon salt
- 12 tablespoon unsalted butter melted
- 1 scoop vanilla ice cream
- ½ cup whipped cream
Pumpkin pie crisp
Preheat oven to 375°. Grease a 12 inch cast iron skillet or casserole dish. Set aside.
In a large mixing bowl, whisk together the sugar, pumpkin puree, 3 eggs, pumpkin pie spice, salt, and vanilla extract. Fold in the heavy cream until smooth and combined. Transfer into the prepared skillet.
In another medium sized mixing bowl, whisk together sugar, flour, cinnamon, and salt. Microwave butter until melted and pour over dry ingredients. Stir with a fork until the mixture is crumbly.
Spread streusel topping on the pumpkin mixture evenly. Bake for 40-45 minutes until the filling is set and the top is golden brown.
Let cool for 10 minutes and then serve with whipped cream and vanilla ice cream!
