Ingredients
  

Pumpkin filling

  • 15 oz pumpkin puree canned
  • 1 cup granulated sugar
  • 3 large eggs
  • teaspoon pumpkin pie spice
  • 2 teaspoon vanilla extract
  • ½ cup heavy cream

Cinnamon Streusel

  • 2 cups all-purpose flour
  • cups granulated sugar
  • 2 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 12 tablespoon unsalted butter melted

Topping

  • 1 scoop vanilla ice cream
  • ½ cup whipped cream

Instructions
 

Pumpkin pie crisp

  • Preheat oven to 375°. Grease a 12 inch cast iron skillet or casserole dish. Set aside.
  • In a large mixing bowl, whisk together the sugar, pumpkin puree, 3 eggs, pumpkin pie spice, salt, and vanilla extract. Fold in the heavy cream until smooth and combined. Transfer into the prepared skillet.
  • In another medium sized mixing bowl, whisk together sugar, flour, cinnamon, and salt. Microwave butter until melted and pour over dry ingredients. Stir with a fork until the mixture is crumbly.
  • Spread streusel topping on the pumpkin mixture evenly. Bake for 40-45 minutes until the filling is set and the top is golden brown.
  • Let cool for 10 minutes and then serve with whipped cream and vanilla ice cream!
