Monster cookie bars

  • 6 tbsp unsalted butter room temperature
  • 4 large eggs
  • 1 cup granulated sugar
  • cup brown sugar
  • cups peanut butter creamy
  • tsp baking soda
  • cups rolled oats not quick oats
  • 1 cup m&m's
  • 1 cup semi-sweet chocolate chips
  • ½ cup peanut butter chips
  • ½ tbsp vanilla extract

  • Preheat oven to 350°. Grease a large baking/cookie sheet with non-stick spray. Set aside.
  • In a stand mixer with large mixing bowl fitted with paddle attachment, mix both sugars and eggs together until smooth. Beat in salt, peanut butter, vanilla, and butter until well combined. Add in baking soda and mix until incorporated and not lumpy.
  • Add in the M&M's, chocolate chips, peanut butter chips and oats until just combined.
  • Spread and layer the batter into a prepared baking sheet, smoothing out the top to have an even layer. Bake for 20-22 minutes or until the edges are light golden brown in color. Allow to cool in pan. Cut and serve when cooled.
