Chocolate cake sandwiches

  • 2 large eggs beaten
  • 1 cup vegetable oil
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 8 tbsp unsweetened cocoa
  • 2 cups light brown sugar
  • 1 tsp salt
  • 1 cup evaporated milk

Cream filling

  • 1 cup vegetable shortening
  • ½ cup evaporated milk
  • 2 cups confectioner's sugar


Chocolate cake sandwich

  • Preheat to 350°. Line baking sheets with silicon mat and set aside.
  • In a small bowl, sift and whisk flour, baking soda, salt, and cocoa together. Add in the rest of the chocolate sandwich ingredients and mix until well combined.
  • Drop the chocolate batter (1-2 tbsp) about 3 inches apart on a baking sheet. Don't put them any closer together or they will mold together during baking.
  • Bake for 6-7 minutes. DON'T bake any longer or the consistency of the cookie will be ruined. Cool down in the refrigerator for 15-20 minutes to harden.

Cream filling

  • With an electric mixer, cream filling ingredients together until smooth and creamy. Spread in between two chocolate cookies after they have cooled in the fridge.
  • You can wrap them in plastic wrap and place back in the fridge if desired.
