The delicious snack that everyone wants back. Two chocolate cake like sandwiches with cream filling!
Chocolate cake sandwiches
- 2 large eggs beaten
- 1 cup vegetable oil
- 3 cups all-purpose flour
- 1 tsp baking soda
- 8 tbsp unsweetened cocoa
- 2 cups light brown sugar
- 1 tsp salt
- 1 cup evaporated milk
- 1 cup vegetable shortening
- ½ cup evaporated milk
- 2 cups confectioner's sugar
Chocolate cake sandwich
Preheat to 350°. Line baking sheets with silicon mat and set aside.
In a small bowl, sift and whisk flour, baking soda, salt, and cocoa together. Add in the rest of the chocolate sandwich ingredients and mix until well combined.
Drop the chocolate batter (1-2 tbsp) about 3 inches apart on a baking sheet. Don't put them any closer together or they will mold together during baking.
Bake for 6-7 minutes. DON'T bake any longer or the consistency of the cookie will be ruined. Cool down in the refrigerator for 15-20 minutes to harden.
With an electric mixer, cream filling ingredients together until smooth and creamy. Spread in between two chocolate cookies after they have cooled in the fridge.
You can wrap them in plastic wrap and place back in the fridge if desired.
