Oreo Brownies cookie
A three layer dessert. Oreo cookies are layered between a fudgy brownie and chocolate chip cookie.
- 12 tbsp unsalted butter
- 1¼ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- ½ tsp salt
- 2 tsp vanilla extract
- 2 large eggs
- ½ cup all-purpose flour
- 10 oz oreo cookies regular stuffed
Chocolate chip cookie layer
- ½ cup unsalted butter
- ½ cup light brown sugar
- ¾ cup granulated sugar
- 1½ tsp vanilla extract
- 1¼ cups all-purpose flour
- ½ tsp salt
- ½ tsp baking soda
- ½ tsp baking powder
- 1 cup semi-sweet chocolate chips
In a saucepan, melt the butter or medium heat. Add in the granulated sugar and cocoa powder once the butter has completely melted. Remove from heat and whisk to combine.
Add in the salt, eggs, and vanilla extract and whisk until completely combined. Pour flour in and continue to mix. Set batter aside.
Chocolate chip cookie dough layer
In a large mixing bowl, cream together the butter and both sugars. Add in the eggs and vanilla, scraping down the sides of the bowl as needed.
Add in the flour, salt, baking soda, and powder. Mix until everything is incorporated. Fold in the chocolate chips and set batter aside.
Assembly of the three layer dessert
Preheat the oven to 350°. Line the bottom of the 9x9 pan with parchment paper and spray with non-stick spray.
Layer the cookie dough on the bottom of the pan, pressing down firmly to form the first layer.
Layer as many Oreos on top of the cookie dough. Only one single layer is needed.
Pour the brownie batter on top of the Oreo layer and make sure it spreads out evenly.
Bake for 35-40 minutes or until knife inserted comes out clean. Let brownies cool for at least 2 hours before slicing and serving! Enjoy!
