These Ice box cookies are delish. The pecans in them give them a great nutty flavor. They are bite sized and easy to make!

  • 3 cups all purpose flour
  • ¾ cup granulated sugar
  • ¾ cup light brown sugar packed firmly
  • 1 cup butter 2 sticks room temperature
  • teaspoon vanilla extract
  • 2 eggs
  • teaspoon baking powder
  • ¾ teaspoon salt
  • 1 cup finely chopped nuts I used pecans


  • Preheat oven to 425°.
  • Combine granulated sugar, brown sugar, butter, vanilla and eggs in a large mixing bowl. With electric mixer beat well until combined.

  • In a medium mixing bowl, combine flour, baking powder and salt. Add to ingredients above and mix well. Fold in pecans with spatula.

  • Divide dough in 3 parts. Roll each part into a log (about 10-12 in in size) and wrap in wax paper. Refrigerate for 3 hours.
  • After 3 hours, take out of fridge and set on hard surface. Unwrap from wax paper and cut into ¼ in slices. Put on cookie sheet. Bake for 5-6 minutes or until golden brown.

  • Store cookies in an airtight container for up to a week. 
  • Freeze cookies for up to 3 months.
