Cranberry Orange cookies
A sweet and chewy cookie loaded with cranberries and orange zest. Top it off with some sugar and you have the best flavors of fall all in one cookie!
- ½ cup unsalted butter room temperature
- 1 cup granulated sugar
- 3 tbsp orange zest 1 medium sized orange
- 2 tsp vanilla extract
- ¼ tsp baking powder
- 1 large egg
- 1¾ cup all-purpose flour
- 2 cups dried cranberries
Preheat oven to 425°. Line two baking sheets with parchment paper and set aside.
In a large mixing bowl and with an electric mixer on medium, cream together the butter, granulated sugar, orange zest, vanilla extract, baking powder and salt. Mix in the one egg.
Mix in the flour and dried cranberries until combined.
Drop about 1½ tbsp of batter onto the cookie sheets. They should have about 1½ to 2 in between each cookie. Using a bottom of a glass, flatten the cookie batter to about ½ in thick. Sprinkle with granulated sugar.
Bake the cookies for for 7-9 minutes until they are barely set or lightly golden brown around the edges.
Remove the cookies from the oven and cool them on the pan. They need about 10 minutes to cool completely! Serve and enjoy!
