Preheat the oven to 375°. Roll out one pie crust on the counter. Cut off the rounded edges to make a square shape.
Cut the square pie crust into four equal rectangular shapes (I had a total of 15).
Place the Oreo cookies in the food processor to crush the cookies into a fine crumb mixture. In a large mixing bowl, blend the cream cheese, butter, and vanilla until smooth. Fold in the crushed Oreo cookies until well blended.
Smooth two teaspoons of the cookies and cream filling in an even layer over the top of each of the 15 squares.
With the leftover dough from each pie crust, cut in long thin strips.
Place the strips along the top of the pop tart and pinch the edges underneath to seal them.
Continue to criss cross strips of pie crust dough to make the pastries look like a mummy. Be sure to leave some room at the top for the candy eyes.
Bake the pastries on a baking sheet for 20-25 minutes until golden brown and cooked through.
Once the pop tarts have cooled down, with the piping bag and tip drizzle the white icing all around the mummy. Place the eyes at the top and then serve!
