Homemade thick hot fudge

  • 10 oz semi sweet chocolate chunks milk chocolate will work as well
  • ½ cup cocoa powder unsweetened
  • ½ cup granulated sugar
  • 1 cup light corn syrup
  • cup heavy whipping cream
  • tsp salt
  • cup water
  • tsp vanilla extract vanilla bean paste
  • 3 tsp unsalted butter cubed


  • In a microwavable bowl, melt the chocolate at 45 second intervals, stirring in between, until melted and smooth.
  • Remove from microwave and stir in the cocoa powder (sifted) until smooth. Please note the mixture will be thick. Set aside.
  • In a large saucepan over medium heat, combine the granulated sugar, light corn syrup, heavy cream, salt and water. Stirring often and bring to a simmer.
  • Let it simmer for 4 minutes. Remove from the heat and stir in vanilla extract and cubed butter until melted.
  • Add to the melted chocolate mixture and stir until smooth. Serve warm over ice cream.


  • Store in mason jars in the refrigerator for up to 3 weeks. Reheat on low power in microwave, stirring several times, until smooth.
