I'm back! Forgive me, I decided that I needed to take the summer off from blogging and just enjoy life with my three kiddos! However, I realized how much I missed it! My comeback to blogging will start with spiced apple cider oatmeal cookies.
These cookies are filled with all the flavors of fall and really take the gold star when it comes to cookies. A soft, chewy, oatmeal cookie with sweet and spicy apple flavors. Eat at breakfast or any time of the day!
From my previous posts, you can all see that I am not the biggest pumpkin fan, so anything spiced or apple cider will always trump pumpkin flavored desserts. And since we haven't even made it to the apple orchard this year to get the amazing apple cider donuts, I figured I would make these spiced apple cider oatmeal cookies!

Ingredients
- All-purpose flour
- Old fashioned oats
- Ground cinnamon
- Granulated and brown sugar
- Unsalted butter
- Eggs
- Apples
- Fresh apple cider
- Vanilla extract

Step by step instructions
- Preheat oven to 350 degrees and line two baking sheets with parchment paper
- In a small sauce pan, boil down the fresh apple cider to ¼ cup and set aside to cool completely. Peel, core and skin apple. Chop up in small pieces. Set aside.
- In a medium mixing bowl, combine flour, oats, cinnamon, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the unsalted butter and brown sugar until light and fluffy.
- Add in the egg, vanilla, and apple cider and mix until well combined. Scrape down the sides of the bowl as necessary.
- Add in the dry ingredients to the butter mixture and mix on medium until well combined. Fold in the chopped apple and cinnamon chips.
- Using a tablespoon, scoop the cookies onto prepared baking sheet. Bake for 10-12 minutes or until edges and centers are set. Cool completely on sheet.
Variations and substitutions
- Substitute the apple cider packet dry mix for fresh apple cider. Flavor may taste different, but still delicious
- Add in chopped walnuts or pecans to cookies
- Add a maple or apple cider glaze to the tops of each cookies
- Experiment with different types of apples
- Add in butterscotch chips to enhance flavor

- 1¼ cup all-purpose flour
- 1¼ cup old fashioned oats
- 2 teaspoon ground cinnamon
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup unsalted butter room temperature
- ½ cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup apples cored and diced
- ¼ cup apple cider
- ½ cup cinnamon chips
Instructions

- Preheat oven to 350°. Line two baking sheets with parchment paper. Set aside. Peel and core 1 apple and dice into very small pieces (will soften when baking). Set aside.
- In a medium mixing bowl, whisk together the flour, oats, cinnamon, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the butter and brown sugar. Add in the one egg, vanilla, and cooled apple cider.
- Add in the dry ingredients to butter mixture and mix until just combined. Fold in apples and cinnamon chips.
- Scoop 1 tablespoon of cookie dough onto prepared baking sheets 2 inches apart. Bake for 10-12 minutes or until center and edges are set. Cool completely on baking sheet. Serve and enjoy!

- Store cookies in an airtight container for 1 week at room temperature or in the freezer for up to 3 months.
