It's a week before Christmas and all through the house, are crumbs from Ritz cracker cookies. And it isn't just my kiddos eating them (I may or may not have had a few).
A rich, buttery, and salty cracker sandwiched between creamy peanut butter and then dipped in chocolate. Add Xmas sprinkles all over and they are complete and ready for Santa when he comes down that chimney! In addition, they are a no bake dessert and so simple!

Ritz cracker cookies have been in family for generations and they are so simple to make! This no bake dessert offers the best of sweet and savory together and can be made with just three simple ingredients.
- Ritz crackers: The generic brand of these crackers will work as well, but I have noticed that the taste is a little different, nonetheless still good!
- Peanut butter: Creamy is the best, but adding chunky peanut butter would taste great! Almond butter or cookie butter are other alternatives that taste awesome with chocolate!
- Milk chocolate: Other alternatives for chocolate are semi-sweet, dark, and white.

Please follow these tips and tricks when making Ritz cracker cookies! It will guarantee success!
- Using high quality chocolate like Lindt or Ghirardelli to ensure a shiny coat around the cookie when dipping. You don't want to cheap out here!
- Be sure to balance your cracker cookie on the fork before dipping in the melted chocolate as this allows excess chocolate to drip off. In addition, tongs can be used to hold the cookie in place.
- Dip cookies right in sprinkles if using as the chocolate dries and sets quickly.
How to make ritz cracker cookies
On top of being one of mine and kids favorite cookies, there are not many steps for preparing these cookies! The longest part is the wait time in the fridge!
First, prepare a baking sheet with parchment paper or a silicone mat. Set that aside.
Second, add 24 ritz crackers to the prepared sheet. Spread on peanut butter on the center of each cracker and then top with another cracker.
Third, melt chocolate in microwave. Level cookie sandwich on fork or between tongs and dip in chocolate letting excess off. Place dipped cookies on baking sheet and dip in sprinkles. Repeat until all cookies are covered. Place them in fridge for at least an hour.
Lastly, take out of fridge and serve. Put rest of the cookies in an airtight container and keep in fridge.

- Dip in different flavors of chocolate such as white and dark.
- Use different fillings such as Nutella, chocolate buttercream, or strawberry jam

- 13.7 oz Ritz Crackers
- ¾ cup creamy peanut butter
- 16 oz milk chocolate chips Melted
- Xmas sprinkles
Instructions
Ritz cracker cookies
- Line a baking sheet with parchment paper and set aside. Place 24 ritz crackers on the prepared baking sheet.
- Scoop about ½ tablespoon of peanut butter on each cracker and then top with another cracker.
- Place chocolate chips in a microwavable bowl and heat in 30 second increments until completely melted. Dip each cracker into the chocolate with two forks (will allow excess to drain off) and place back onto lined baking sheet. Dip in sprinkles if desired.
- Place cookies into the fridge for 1 hour until set and firm. Transfer to airtight container and store in the fridge. Enjoy!
