    Fluffy oat flour pancakes

    Remember Wilford Brimley and the Quaker Oat meal cereal spokesperson, circa 1990's? He is all that I could think about when I was making these fluffy oat flour pancakes! Again, I am really aging myself! 

    Oat flour pancakes that are fluffy.

    Warm, delicious pancakes made from homemade oat flour. Pour any maple syrup, fruit or chocolate chips over them and breakfast is served! The oat flour really gives it that warm bowl of oatmeal on a cold day feel!  In addition, it is part of a very healthy and balanced breakfast or dinner, whichever you prefer! 

    Ingredients

    • Quaker oats
    • Milk
    • apple cider vinegar
    • egg
    • baking powder
    • vanilla extract

    Why are oat flour pancakes so healthy?

    • Oat flour is  gluten free
    • Give you a healthy does of extra daily fiber in your diet
    • Completely nut free 
    • Oat flour is very heart friendly and great for the cholesterol

    Step by step instructions

    First, in your food processor grind down the oats to a fine powder. Pour the flour into a mixing bowl. 

    Second, whisk in the granulated sugar, vanilla, egg, and buttermilk mixture. Next, heat skillet up to approximately 400 degrees. 

    Third, pour batter into skillet and grill to perfection. Serve with maple syrup, fruit or chocolate chips on top!

    Tips and tricks

    • Don't leave the batter to sit for too long. The oats are not cooked so they will absorb a ton of the moisture over time creating a thicker batter. It won't spread as well in the skillet. If you have ever had overnight oats, you will know what I am talking about.
    • Since he batter is already thin at the start, don't throw in any chocolate chips or other add-ins because they will just sink to the bottom. Nevertheless, it is okay to throw them on top at the end!
    •  If the batter is too thin or to thick, you can always add extra milk or extra oats to get the right consistency. 

    Substitutions and variations

    • Substitute all-purpose flour for oat flour
    • Use almond milk
    • Substitute with maple syrup for the sweetener

    FAQ's

    How do I make these pancakes fluffy?

    You need to have the perfect consistency. Pancake batter should be thin enough to form a pancake when poured into skillet, but no more. If it is too thick add more milk.

    Is oat flour good to use for other baked goods?

    Yes, it can be a substitute for other baked goods such as cookies, bars, or even pie crusts.

    Ingredients
      

    Oat flour pancakes

    • 1 cup oat fashioned oats pulsed down in food processor to make oat flour
    • ⅓ cup milk
    • 2 teaspoon apple cider vinegar
    • 1½ teaspoon baking powder
    • 1 tablespoon granulated sugar
    • 1 large egg beaten
    • 1 teaspoon vanilla extract

    Instructions
     

    Oat flour pancakes

    • In a food processor, grind 1 cup of old fashioned oats down to a fine powder. Put in mixing bowl. In another small bowl, mix together the milk and vinegar and let it sit for 5 minutes (to create own buttermilk)
    • Whisk in the buttermilk, egg, sugar, baking powder and vanilla extract. Turn skillet on over direct heat to reach 400°.
    • Pour batter in the skillet and make pancakes. Serve with any fruit, chocolate chips or syrup!
