    EASY pineapple pie (no bake)

    Who lives in a pineapple under the sea? Sponge Bob square pants! This is the tune that was stuck in my head today when I was making my easy pineapple pie. However, the funny part is that I don't even think I or my kiddos have ever seen an episode of Sponge Bob. It is one hell of a catchy tune!

    It is a perfect 90 degree day to make this refreshing pie. A sweet pineapple filling folded in with creamy cool whip and then layered into a sweet graham cracker crust. This is something that I will be eating tonight after dinner.

    Nonetheless, this pie is the perfect addition for a hot summer pool party or any get together the requires a dish or dessert to pass. No pieces will be left to take home!

    No bake creamy pineapple pie

    This pie was a new dessert on my list to make, but the fact that it was a no bake made it that much better after a long weekend! It is simple, and a no bake dessert. The prep time is short but the chilling time is long. However, it is worth the wait!

    Ingredients and substitutions

    There are only a few ingredients in this pie. So if you are looking to make something cheaper, this no bake creamy pineapple pie is for you.

    • Sweetened condensed milk
    • Canned crushed pineapple
    • Lemon juice
    • Cool whip
    • Graham crackers: using a store bought crust works as well.
    • Brown sugar
    • Unsalted butter

    How to make an easy pineapple pie

    This easy pineapple pie is so simple and is a no bake. Follow these steps below and you will end up with the most perfect summer dessert!

    First, pulse down graham crackers in food processor to a fine crumb mixture. Add the mixture to a mixing bowl. Add in melted butter, brown sugar and pinch of salt. Mix together and press firmly into a 9 inch pie plate. Bake at 350 degrees for 7-8 minutes. Take out a let cool.

    Second, in another large mixing bowl, add condensed milk, crushed pineapple, and lemon juice and mix until combined. Fold in cool whip until no streaks are seen. Pour filling into prepared pie crust.

    Lastly, chill for at least 2 hours and then serve. Nuts and extra pineapple are optional on top.

    Variations and substitutions

    • Make as a no bake pineapple dessert in a 9x13 pan.
    • Add crushed macadamia nuts or extra pineapple on top.
    • Use a shortbread crust.

    What if my pineapple pie is not setting well?

    Be sure to drain the canned pineapple well otherwise the the pie will not set well.

    Ingredients
      

    Graham cracker crust

    • 2 cups graham cracker crumbs
    • 12 tablespoon unsalted butter
    • ¼ cup brown sugar
    • pinch of salt

    Creamy pineapple filling

    • 14 oz sweetened condensed milk
    • 8 oz pineapple crushed and undrained
    • ⅕ cup lemon juice fresh
    • 8 oz cool whip thawed

    Instructions
     

    Graham cracker crust

    • In a food processor, pulse graham crackers down to a fine crumb mixture. Mix together graham crackers, melted butter, brown sugar, and pinch of salt together. Press mixture firmly into a 9 inch pie pan. Bake at 350° for 7-8 minutes. Let cool.

    Creamy pineapple filling

    • In a large mixing bowl, add in the condensed milk, crushed pineapple, and lemon juice and mix until combined. Fold in the thawed whipped topping.
    • Pour the filling into the baked graham cracker crust. Refrigerate until set (2-4 hours). Serve and enjoy! Add on crushed nuts on top or additional pineapple.
