    Moist maple glazed banana bread

    Holy maple syrup! My breakfast just got that much better by adding this to the menu! A moist maple glazed banana bread is the perfect breakfast bread for those cold and brisk mornings. Sending the kids off to school with a slice or two of this in their bellies, makes this mama feel good!

    A moist maple flavored banana bread served warm and drizzled with a maple glaze and bacon bits. OMG! Sweet and Savory at it's best!

    Let me tell you why pure maple syrup and bananas make the best combination in my maple syrup banana bread....

    Maple syrup and bananas are actually healthy for you. Pure maple syrup is loaded with minerals and antioxidants, and has fewer calories than honey! 

    Bananas, as we all know are high in potassium, great for heart health and aid in digestion. 

    Disclaimer, this bread isn't the healthiest thing I have ever made, but overall not the worst. Nonetheless, this combination makes my lips smack with excitement!

    Ingredients

    •  All-purpose flour
    • Dark brown sugar
    • Pure maple syrup
    • Baking soda
    • Salt
    • Unsalted butter
    • Eggs
    • Bananas
    • Sour cream
    • Bacon: I prefer microwavable bacon, saves on time and tastes just as great!
    • Confectioner's sugar

    Step by step instructions

    Maple syrup banana bread is actually pretty easy to make. The bake time is the longest part, but at least you get to sit there and smell it while it is baking! 

    First, preheat oven to 350 degrees. Grease a 9x5 bread loaf pan. Set aside. Next, whisk all the dry ingredients together. Set both aside.

    Second, with electric hand mixer, beat the butter and brown sugar in a small mixing bowl for 3 minutes. Pour in maple syrup and beat an additional minute. Add in the eggs one at a time, beating well after each addition. Mix in the vanilla extract and smashed bananas. 

    Third, add in the dry ingredients and mix on medium just until combined. Add in sour cream and then add in the last of the dry ingredients. 

    Fourth, pour the batter in prepared bread loaf pan. Bake for 50-60 minutes or until a knife inserted in the center comes out clean. Remove from oven to a wire rack until completely cool.

    Lastly, make the maple bacon glaze. In a mixing bowl, whisk together the maple syrup and confectioner's sugar. Microwave bacon until crunchy. Drizzle syrup over cooled bread and add bacon pieces. Serve and enjoy!

    Tips and tricks

    •  Don't over mix the bread batter. When the bread is baked it will come out more light and fluffy.
    • Make sure bananas are ripe: This is a rule when making any kind of dessert with bananas.
    • Room temperature butter is best: it creates the best texture for the bread.
    • LET the bread rest overnight if you can resist! This time allows for the maple syrup and other flavors really set in!

    Substitutions and variations

    • Make into mini loafs versus a larger one
    • Substitute yogurt for sour cream to add additional moisture to the bread
    • Instead of microwavable bacon, fry up the real traditional bacon which will enhance flavor
    • Add in some nuts or chocolate chips

    In an airtight container at room temperature for 3-4 days. You may also put it in the fridge to keep it more fresh.

    Can I freeze this bread?

    Yes, wrap in saran wrap without the glaze on top for 2 months. Thaw overnight in the fridge.

    Ingredients

    • 1¾ cups all-purpose flour
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • 1 teaspoon vanilla extract
    • ½ cup unsalted butter room temperature
    • ⅔ cup dark brown sugar
    • ⅓ cup pure maple syrup
    • 2 large eggs room temperature
    • 1½ cups bananas smashed, 3-4
    • ¼ cup sour cream

    Maple bacon glaze

    • 6 tablespoon confectioner's sugar
    • ⅓ cup pure maple syrup
    • ¼ cup bacon crumbled

    Instructions

    • Preheat oven to 350°. Grease a 9x5 bread loaf pan with vegetable shotening.
    • In a small mixing bowl, whisk together flour, salt and baking soda. Set aside.
    • Using an electric hand mixer, cream the butter and brown sugar until light and fluffy (3 minutes). Add in the maple syrup and mix for one more minute. Scrape down the sides of the bowl as needed.
    • Beat in the eggs one at a time, mixing well after each addition. Blend in smashed bananas and vanilla extract and mix until completely incorporated.
    • With the mixer on low speed, add half of the flour mixture and beat until just combined. Add in the sour cream until well blended. Then, add in the rest of the flour mixture. DON'T overmix, the less you mix the lighter and fluffier the bread will be.
    • Pour batter in prepared bread pan. Bake for 50-60 minutes or until a knife comes out clean in the center. Remove from oven and place on a wire rack to completely cool.

    Maple bacon glaze

    • In a small mixing bowl, whisk together the confectioner's sugar and maple syrup. Crumble up bacon. Drizzle glaze over bread and layer with bacon pieces. Serve and enjoy!
