I love me some churro desserts and these churro cookies scream everything related to churros. They are filled with enough cinnamon and sugar flavor from the cookie itself all the way down to the frosting.
I have been hearing about Crumbl for years now, but feel as though I am cheating on myself. I am a home baker and make amazing stuffed cookies and would love my cookies to have their own franchise someday (a girl can dream right?). However, after making these large and soft copycat Crumbl churro cookie, I can see what all the fuss is about! So delicious!
Ingredients and substitutions
- Cinnamon and sugar: I opted to not make my own mixture, but rather use a prepared one from our local Elegant Farmer. It is just as good as mixing cinnamon and sugar together and with less of a mess. If you are ever in the Mukwonago area, be sure to stop and visit there!
- Cornstarch: binds with liquids in the cookie dough and helps prevent them from spreading too much. In addition, it helps with the soft and chewy texture.
- Unsalted butter: At room temperature this helps with the texture of the cookie as well as the flavor. However, other recipes I have searched call for either vegetable shortening or lard.

- Have all your ingredients such as unsalted butter and eggs at room temperature when mixing. This will ensure the best outcome for the cookies.
- If you want a larger cookie, smaller ones can be made. However, baking times will be different.
- Serving these cookies chilled is what is recommended. Nonetheless, I have eaten them at room temperature and chilled and both are amazing! Pick your poison.
- According to the Crumbl owners, when in doubt, "Scrape it out". Make sure all ingredients get incorporated into the mixture. Mixing too much will cause the cookies to become dense, so don't overmix.
How to make Copycat CRUMBL Churro cookies
The great thing about these churro cookies is that they are simple to make and ingredients can all be found in the pantry.
First, preheat oven to 375 degrees. Line two baking sheets with parchment paper. Next, add the cinnamon sugar mixture to a bowl and set aside.
Second, in a large mixing bowl, cream the butter and sugars together until light and fluffy. Add in the eggs and vanilla extract and mix until combined. Whisk all dry ingredients together and add in butter mixture. Blend until just incorporated.
Third, roll out 2.5 inch cookie dough balls and coat in cinnamon sugar. Place on prepared baking sheets. Bake for 10 minutes or until cookies have puffed up. Browning of the cookies should not happen. Let cookies cool completely.
Cinnamon buttercream frosting
This frosting is simply divine! In a mixing bowl, cream together the unsalted butter until light and fluffy. Slowly, add in confectioner's sugar until combined.
Next, add in the rest of the ingredients until desired consistency of the frosting has been reached. Place frosting into a piping bag fitted with a large round tip.
Frost on cooled cookies. Store in fridge before serving.
How do I store these cookies?
These cookies can be stored in an airtight container for 3 days at room temperature or up to a week in the fridge. In addition, they can be frozen for one month.

Churro cookies
- 1 cup unsalted butter room temperature
- 1 cup light brown sugar
- ½ cup granulated sugar
- 2 large eggs room temperature
- 2 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 tablespoon cornstarch
- 1½ teaspoon ground cinnamon
- ½ teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
Cinnamon sugar topping
- ½ cup cinnamon sugar Elegant farmer
Cinnamon buttercream frosting
- ¾ cup unsalted butter room temperature
- 3 cups confectioner's sugar
- ½ cup light brown sugar
- 2 teaspoon ground cinnamon
- ⅛ cup 2% milk
- pinch of salt
Instructions
Churro cookies
- In a large mixing bowl, with an electric mixer, cream together the butter and both sugars until light and fluffy. Add in eggs one at a time, mixing well after each addition. Mix in vanilla extract.
- In another medium mixing bowl, whisk together the flour, baking soda and powder, salt, cinnamon, and cornstarch.
- Add the dry ingredients to the butter mixture. Mix until just incorporated. Set aside.
Cinnamon sugar topping
- Add the Elegant Farmer's cinnamon sugar mixture to a small bowl. Roll the dough to approximately 2½ inch balls. Prepare baking sheets with parchment paper. Preheat oven to 375°.
- Roll dough balls into cinnamon sugar mixture to coat. Add coated cookie dough balls to a prepared baking sheet about 3 inches apart.
- Bake for 10-12 minutes. Cookies should be puffy and not browned. Cool to room temperature.
Cinnamon buttercream frosting
- In a mixing bowl, cream the butter on high with electric mixer until light and fluffy.
- Add in confectioner's sugar and mix on low until combined. Add in cinnamon, brown sugar, salt and milk until desired consistency is reached.
- Frost completely cooled cookies. Store in refrigerator and serve cold!
