    Christmas Chocolate Cookies

    Oh how I love these Christmas chocolate cookies. They are a light, donut like cookie. A soft center that is topped with creamy vanilla frosting makes you go Yum! I am thinking Santa's favorite cookie for sure. I am a believer in this cookie and I don't think his elves will be disappointed either. 

    Another chocolate cookie that he may like would be my Ultimate chocolate chip cookies. I am really on a kick with chocolate lately, maybe its the holiday season or because I love everything chocolate, but these cookies are just plain yummy in the tummy!

    Chocolate christmas cookies

    Christmas chocolate cookies are very sentimental to me. My maternal grandmother made these every year when I was growing up and it quickly became our family favorite. 

    So when I was making these the other day, my heart had a pang in it. She was an amazing lady and even though she passed way 11 years ago now, there isn't a day that goes by that I don't think of her and her feisty, full of life personality. I like to think that my sarcastic and sassiness came from her and am very thankful for that. So here's to you Grandma and I hope I did you proud by making these awesome cookies! 

    What ingredients are in these cookies, you ask?

    •  Unsalted butter
    • Milk: 2% or whole work best
    • All-purpose flour
    • Semi-sweet chocolate bar: This the secret ingredient in these cookies. It is melted and folded in to give it is rich flavor. Unsweetened cocoa powder may work, but the taste won't be the same.

    Why are these cookies so good?

    • The recipe was from my amazing maternal grandmother
    • Have a soft pillow like texture like a donut 
    • The vanilla frosting is the perfect compliment to the cookie
    • Each bite melts in your mouth

    How to make the Christmas Chocolate cookies

    The best part of these cookies is that they are super duper easy to make. Sometimes the simplest of recipes turn out the best. 

    You start out by preheating your oven to 375 degrees. Line your cookie sheets with a silicon baking mat. If you don't have a silicon baking mat  you can grease the cookie sheets with non-stick spray. 

    In a large mixing bowl, cream together the sugar and butter until combined. Add in the well beaten eggs and continue to mix. You then add in the other ingredients one at a time and mix well. With the milk, place the baking soda inside of it and stir. So when you add that to the batter they are both together. Once mixed up place a walnut sized ball on the silicon baking mats. The batter is sticky, but that is what makes the cookie so donut like. Bake for 10 minutes and let cool for 10 minutes.

    Vanilla Frosting

    This frosting is so delicious. You add in your salted butter, vanilla extract and confectioner's sugar. Blend until combined. Add 1-2 tablespoon of half and half or milk to get your desired consistency. 

    You can double this recipe to make more frosting.

    Ingredients
      

    Chocolate cookie

    • ½ cup unsalted butte room temperature
    • ½ cup granulated sugar
    • 2 large eggs, well beaten
    • 1 teaspoon vanilla extract
    • 1½ cup all purpose flour
    • ½ teaspoon baking soda put inside milk and stir up
    • ¼ cup milk
    • 2 squares semi-sweet chocolate melted

    Vanilla Frosting

    • ½ cup unsalted butter room temperature
    • 1 teaspoon vanilla extract
    • 2 cups confectioner's sugar
    • 1-2 tablespoon half and half can also use milk
    • pinch of salt

    Instructions

    • Preheat oven to 375°. n a large mixing bowl, cream together the butter and sugar until completely combined.

    • Add in the eggs and mix well.

    • Lastly, add in the rest of the dry ingredients and mix until well combined.

    • Drop on silicon mats on cookie sheets. The batter will be sticky but that is normal. Bake for 10 minutes. Cookies will puff up when done.

    Vanilla Frosting

    • Combine in a large mixing bowl the butter, vanilla extract, confectioner's sugar and half and half. You may need to add more confectioner's sugar or half and half depending on your desired consistency.
    • Frost cookies after they have cooled for about 20 minutes and enjoy!

    Notes

    • Store in an airtight container in the fridge for about 5-7 days.
    • Freeze for up to 3 months.
