A loaf cake is made in a bread loaf pan, as its name implies. It is also known as quick bread and can incorporate a variety of ingredients including many fruits and nuts.
In addition, as with this recipe, chocolate chips were added and it became the perfect comfort cake. It doesn't take much for me to make anything with chocolate chips in it and I made it on a whim after eating a piece at a friend's birthday party!
Ingredients
- All-purpose flour
- Granulated sugar
- Unsalted butter
- Vanilla extract
- Milk chocolate chips: semi-sweet or dark chocolate chips can be used as well.
Tips and tricks
- Put the pan in the oven on the middle rack. This will allow for the cake to bake evenly.
- Tent around the sides of the pan with aluminum foil half way through if you notice that the cake is browning on the sides.
- No peaking or opening oven in early stages of baking. This will allow for heat to be released out and cause the cake to sink in middle.
- Take cake out of the pan within about 10 minutes and transfer to cooling rack. If left in the pan too long, moisture will build up on the bottom making it soggy.
How to make the perfect loaf cake
As with previous loaf cake recipes on my site, this recipe requires little to no time at all to make. However, it doesn't lack in taste! Follow these steps and you will have the perfect chocolate chip loaf cake!
First, preheat the oven to 350 degrees. Line or grease your loaf pan with non-stick spray or parchment paper. Set aside.
Second, in a medium sized mixing bowl, whisk together all of the dry ingredients. Set aside.
Third, in a large mixing bowl, cream together the butter and sugar until light and fluffy. Add in the eggs and vanilla extract and mix until well combined. Next, with the mixer on low speed, slowly add in the milk until combined.
Fourth, mix the dry ingredients into the wet ingredients until just combined. Be sure not to over mix. Fold in the chocolate chips. Pour batter into prepared loaf pan.
Lastly, bake for 55-60 minutes or until toothpick inserted in the center comes out clean. Let cool and transfer to a wire rack to complete cooling. Slice, serve, and enjoy!
